Ingredient:
1 Cantaloupe
1 Honeydew
1/2 Seedless Watermelon
4 Peaches
2 Limes
1/4 cup fresh Cilantro
Directions:
Chop cantaloupe, honeydew and melons to bite sized pieces. Peel peaches and cut into halves, grill until golden brown. Let sit for a few minutes until cool then cut into bite sized pieces. Toss all fruit in bowl. Squeeze both limes until juice coats fruit. Add fresh chopped cilantro to taste. Toss all ingredients in large bowl.
Really easy right? It pairs well with a jerk chicken and sangria. An affordable, delicious and each dish for an entertaining dinner.
HOT TIP: To prepare your peaches; X out to bottom breaking the skin, blanch in boiling hot water for 1 min then soak in ice water for 1 min. After this process drain and let them sit for just a minute and then peel. Then skin should fall right off!!
